Six Sisters’ Stuff shared this awesome dish on Pinterest and it makes for a great fall soup or dip with chips!
Their recipe called for a can of condensed cheddar cheese soup, and after looking in Whole Foods, Trader Joe’s, CVS and a local market for it, I was unsuccessful. So I googled "how to make a substitute condensed cheddar soup." Thankfully, the substitute is WAY healthier than a processed can of soup could ever be.
Nothing like a Google search to save the day for a delicious meal.
Nacho Grande Soup
Get the Goods
- 1 lb ground turkey
- 1 medium onion, diced
- 1 clove garlic, diced
- 1 package taco seasoning
- 1 can diced tomatoes and green chilis, undrained
- 1 ½ cups milk
- 1 cup shredded cheddar cheese
Condensed Cheddar Cheese Soup Substitute
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1 cup milk
- 1 ½ cup cheddar cheese, shredded
Just a Few Steps
1. In a skillet, cook ground turkey, onion and garlic over medium-high heat until thoroughly cooked; drain.
2. To make the cheddar cheese substitute: Melt butter over medium-low heat in a saucepan. Add flour and whisk together until smooth. Slowly add milk and continue whisking while bringing mixture to a gentle boil. Once it thickens slightly, add cheese and stir until melted.
3. In a large pot, add the cooked ground turkey, cheddar cheese substitute, taco seasoning, diced tomatoes, and milk over medium-high heat for about 20 minutes, stirring occasionally. Stir well before serving.
