Crock Pot Tortellini Soup

This is a DELICIOUS recipe that I’m so grateful Chelcie shared with me last week. I’ve shared this with my 100% Italian Mom and Grandma, who are both extremely experienced cooks, and they LOVED this 7-ingredient Crock Pot dish. 

Crock Pot Tortellini Soup

Serves 2-4

Get The Goods

  • 1 jar marinara sauce
  • ½ lb ground beef (I always add extra!)
  • ½ bag baby spinach 
  • 2 cups chicken broth
  • 4 oz sliced mushrooms
  • 4 oz cream cheese
  • 8 oz frozen cheese tortellini

Just a Few Steps

1. In a saute pan, add 1 tsp olive oil. Over med-high heat, add in ½ lb ground beef. Using a spatula, break up the meat into little pieces. Cook for about 5 minutes until meat looks browned. 

2. In the Crock Pot, add in browned beef, marinara sauce, cream cheese, and mushrooms (or no mushrooms if you’re picky like me). 

3. Cook on LOW HEAT for 6 hours.

4. 20 minutes before eating, turn the heat to HIGH. Add in the frozen cheese tortellini and spinach. Cook for 20 minutes on HIGH and serve. 

Don’t worry about making too much. The leftovers later that night or the next day for lunch are to DIE for! Some would argue it tastes even better at refrigerator temperature.
