Spicy Roasted Chickpea Snack

NOMMMMMMMMMM! Roasted chickpeas are an effortless snack. Once they’re in front of me I won’t. stop. eating. They're so simple to prepare and great for those lazy dinner nights, weekend snacks, or a side dish for lunch (if you're #blessed with an oven in your office). 

All you need is olive oil, a dash of salt and canned chickpeas! If you want to spice it up a bit (which I highly recommend), you can make your own cayenne pepper mix to give it extra heat and flavor. 

That is WAY more than you need for one batch (this was double what I needed). So I saved the rest in a ziplock bag and used it a few days later when I made this delicious treat again.

Spicy Roasted Chickpea Snack

Serves 2 (or 1 if you’re addicted like me)

Get the Goods

  • 1 can (15 oz) chickpeas
  • 1 tablespoon olive oil
  • Salt to taste

For the Spicy Version, mix together: 

  • 1 teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper

Just a Few Steps

1. Preheat the oven to 375 degrees. Drain and thoroughly rinse chickpeas, then dry with a paper towel. Drizzle with olive oil and bake for 30 minutes, shaking every 10 minutes. 

2. Remove from oven and toss the salt/paprika/cayenne pepper mixture over the roasted chickpeas. Serve hot!
